Who's ready for a delicious recipe for dessert? This is just one of the desserts served at Cascade Creek Lodge throughout our fishing season by our chef Kristi. And she was kind enough to give out the recipe to all of you to make at home!
Tiramisu Cheesecake Recipe
Crust:
1 and 1/4 cup Vanilla Wafer Crumbs
1/4 cup Butter, melted
1 and 1/2 tablespoons Sugar
Kahlua Mix:
3 tablespoons Warm water
2 tablespoons Instant espresso powder
1 cup Kahlua
12 Ladyfingers
Cheesecake:
16 oz Cream Cheese
16 oz Mascarpone Cheese
1 and 1/4 cup Sugar
2 teaspoons Lemon juice
1 teaspoon Vanilla Extract
3 Eggs
Kahlua Whipped Cream:
1 cup Heavy Whipping cream
1/4 cup Kahlua mixture (from above)
1/2 cup Powdered sugar
Cocoa powder
Directions:
Mix wafer crumbs, butter, and sugar together
Press into the bottom of a 9 inch springform pan, Bake at 350 degrees for 10 minutes
Mix together water, espresso powder, and kahlua
Dip each lady finger into the kahlua mixture, then place on top of the wafer crust
Mix together cream cheese, mascarpone, sugar, lemon juice, and vanilla extract until smooth
Mix in eggs, one at a time
Pour over the crust and ladyfingers
Bake at 350 degrees in a water bath for 45 minutes. Or until done
Once cheesecake has completely cooled, place heavy whipping cream, kahlua mix and powdered sugar together in a bowl, and whip to stiff peaks
Put whip cream on top of the cooled cheesecake, and sprinkle with cocoa powder
Chill until ready to serve
